Making Biltong

Most of us are familiar with jerky and permacan as a way to preserve meat. Here is a similar method of drying meat from South Africa.

Now that I have a bit of time on my hand, I think I'll dig out my electric food dryer and give it a try.

Thanks for posting this recipe. I will have to give that a try.

I have tried drying meat once or twice -- we have friends with a meat slicer so we got them to slice a topside of beef for us and then I sprinkled each slice with turmeric, white pepper and salt and dried in the dehydrator we have. It's a great snack food for me away from home as I can't eat a lot of the processed foods in the shops so I should get on and make some more.
